Wow... there have been a lot of tragedies and natural disasters all over the world recently. As we all struggle in this time of economic duress... I am pretty sure we cannot even begin to imagine how difficult it is for some to get by without the most basic of human necessities. People need help particularly in Haiti right now. Ok, so I am on a little cooking kick now that I am back in my own kitchen and have gotten all of my kitchen gadgets out of storage. I have been consciously making an effort to have our family eat healthier lately, and I have been trying to make enough for left-overs for Adam's lunch the next day. He is very picky about his leftovers. Today's leftovers were a hit... Teriyaki salmon on rice with cauliflower. Tonight's meal was from this awesome cookbook that I am reeeeaally loving. I made the Turkey Chili tonight and I think it might be the yummiest and most healthy meal that I have ever made. It was SO delicious. Ruby {my 2 year old} loved it. And I just relished in watching her eat... knowing that she was eating red peppers, carrots, flax seed, tomatoes, extra lean turkey, and all of the other great ingredients. This is definitely a "repeat" as Adam would say. You really must get this cookbook.

Ingredients

*I would maybe add a cup of corn next time, and I did add more spices than the recipe calls for.

Directions

1. Coat the bottom of a large pot with cooking spray and set it over medium heat. When the pot is hot, add the oil. Add the onion and cook until it begins to soften, about 2 minutes.
2. Meanwhile, sprinkle the turkey with the garlic, chili powder, salt, paprika, and pepper. Add the turkey to the pot and cook, stirring occasionally, until the turkey is no longer pink, 5 - 6 minutes.
3. Stir in the tomatoes. Add the broth, red pepper puree, carrot puree, cornmeal, and flaxseed meal, and stir well. Bring to a boil, reduce heat, and simmer, covered 15 - 20 minutes, or until the flavors have blended. Stir in the beans and cook a little longer, just to heat them through.

Top it off with some shredded cheese and sour cream and wala! Deeeeelicious.

Lately I have been worrying that Ruby is not getting enough of the "right" foods. We recently moved {hence the lack of blogging} and that has made it even more of a challenge to make sure that we all are. I am such an "on-the-go" person and sometimes leave with her in tow at 9:00 in the morning and do not return until after 4:00 pm or so! So... last night, I cracked out this gem of a Christmas gift and decided I would try out one of the recipes. Each recipe has some kind of pureed fruit of vegetable to sneak into it! I had some super ripe bananas, so I opted to sample the banana bread recipe. I love banana bread. I am not gonna lie... the steaming and pureeing fruits and vegetables is going to get some getting used to but I love the idea that Ruby is getting more veggies in her diet.

Ingredients

Directions

Steam cauliflower and puree 1/2 c, set aside.
Preheat oven to 350.
Spray a 9x5 loaf pan with nonstick spray.
In a ziplock, mix flours with baking soda, baking powder, salt, and cinnamon. Set aside.
In lg bowl, mix the sugar and oil with a wooden spoon til well combined. Mix in egg whites if using, then banana, cauliflower puree, and vanilla. Add flour mixture and mix til just combined.
Pour batter into pan, bake til a toothpick comes out clean...55-60 minutes. Let cool on a rack for 5 minutes then turn out onto rack to cool before serving.
Enjoy!

Thank you for your comment. Wow... I guess I didn't realize how many people really have an opinion on my blog having my personal opinions on them... which it definitely does. Regardless... I thought it was funny. The reason I started this blog, was for ME to have some kind of record/place to save cool/funny/great ideas that I find as I meander the web. I really don't care about attracting more readers. This is my little journal of those fun things that I find. I don't know about some of you but I have a notebook full of random pages that I have torn out of magazines... just the same... of ideas/recipes/cool photos... whatever... and I rarely look through that unorganized mess of a folder. THIS is my way or "tearing" ideas off of the internet and saving them for a rainy day... my way to organize them. And if some of you want to share the ideas with me, fabulous. If you don't, that is fine too. And for that person that wants more explanation about why a post a video of a particular song, or whatever... you just might be S.O.L. Maybe, just maybe I posted something because I liked it, because it is pretty, funny, or because I want to remember it and go back to it someday. So sorry to disappoint.

Everyone keeps asking me what Santa is bringing Ruby for Christmas?? Hmmm. I realized a few days ago that I had NOTHING for her! Literally. I mean I know that she IS getting things from Grandparents and maybe a cousin or two.. but we have nothing for her. Am I a HORRIBLE mother? What?? She doesn't need anything and I really do not need anymore toys around the house. So I was browsing at DownEast Home the other day and I found this darling music box with a ballerina inside that spins to "Somewhere Over the Rainbow." My little "Dorothy" will LOVE it. It was $9.00... much better than $39 here. I bought it. So now.... I do have one gift for Ruby to open on Friday morning:) Trust me... she will still get more than she needs. I hope you all do too. A Christmas Carol

Ok, I know I have been horrible at posting lately but it is a good thing. It means I have been super busy with my photography and playing outside in this 70 degree weather. It is NOVEMBER in Salt Lake City and unseasonably warm. We are taking full advantage of it. Today however... I have to admit, on this beautiful day we went to the opening of A Christmas Carol with Jim Carrey. It was pretty entertaining AND pretty "spooky" as Ruby would say. I don't know what I was thinking taking her. She is not afraid of anything (except my brother in-law Tom... for good reason)! Usually, Ruby would be interested in a movie... but get little bored midway through and explore. Not this movie... her eyes were locked to that screen, through those little 3D glasses. I wish I had a picture, she looked so cute. Like I said though... this movie was very entertaining and Jim Carrey's performance as multiple characters was impressive.

USUALLY Old Navy's little boy stuff is not that impressive, while their toddler girls stuff is darling. Well... last night, I found myself way more interested in these fun tee's than any of the girls stuff. And they have almost all of these tee's in Men's sizes too! Is this the tomboy in me emerging, or am I a little baby boy hungry?? Who knows. And, NO I am not pregnant. I have a confession to make though... I bought the Spiderman one and the Chicago Bears one (with a matching one for Adam) for Ruby! I think I can girl them up a little with cute skinny jeans and darling shoes. Just you wait.

I am sorry to say that I was not a huge fan. I was BORED! I mean little tidbits were kind of cute and tugged at the heartstrings but overall... I did not walk out of the movie thinking... I LOVED it. It was slightly depressing....
And I know they are supposed to be wild creatures and everything... but they were kind of hard to look at... they were so hideous. I would have liked these costumes much better! I did think the cinematography was pretty incredible though. I loved all of these shots that were filmed into the setting/rising sun. It was gorgeous. Overall, I would not recommend you dropping a fortune taking your family to this flick. Wait until the dollar movies or rent this one!

On Septemer 9th we celebrated the spectacular & brief life of my little niece Willa Tempest Jones with the Annual Fairy Festival. This event was AMAZING and I am so proud and honored that I could be small part of it. It is incredible how much a small infant can affect your life... even when it is not your own. This one event in my life (really my brother and sister in-law's life) has been so paramount for me. It makes me appreciate what I have so much. Although trials are SO difficult to go through... I love when the outcome is the bringing together of individuals and families.

"Willa's Workshop, Inc. is a non-profit corporation formed in 2008. Its purpose and mission is to foster the spirit of creativity and generosity in children. Through Willa's Workshop, children meet throughout the summer months to create art, handicrafts and other projects. All of the wares are saved for the Annual Fairy Festival on September 9th, where they are sold and the proceeds donated to charity. In addition to the sale of handicrafts, the Annual Fairy Festival is a celebration of life and childhood. Children are encouraged to dress up and participate in the fairy-themed activities of the night. The proceeds of this year's Annual Fairy Festival will be donated to the Juvenile Diabetes Research Foundation. Each year, the proceeds will be donated to a different, deserving foundation."

I LOVED everything about it.... the cinematography, the wardrobes, the colors, the style... they way the story time line developed, the actors (including my favorite guy from Criminal Minds), THE SOUNDTRACK. LOVED IT. You should DEFINITELY go see it at a theater near you. And tell me... after you see it... did he remind you of Heath Ledger at all??

I gave my last one to my brother before he moved to Istanbul. So today... I got a new one. Google it, you can find them all over.

This glorious day is dedicated to my beautiful little girl Ruby. What is the occasion you ask?? She slept from 9pm to 9am this morning without waking up once! She is 22 months old and that is a first for her. Cross your fingers for my sake that she is turning over a new leaf:)

Can any of you tell me what is so great about the "Cricut" machine? Every time I go into Roberts... I get bombarded with different deals or accessories for the Cricut. I guess I am not intrigued because I am not a scrapbooker. Well... this time, I found a product (i think it was originally a cricut accessory) that I want. For some reason, I have always been borderline obsessed (different from actually being prepared) with emergency preparedness and being able to live and function without many of todays conveniences etc. One of my best friend's dad is buiding a solar home in Heber. He is completely off the grid, has his own well and everything. If there was an emergency... I would probably go a runnin' to him! This cool portable solar briefcase & battery pack by Omega Solar Systems would be so great to have in an emergency situation... or even camping, or a day at the beach. I want it.
