helping never felt so good.

Wow... there have been a lot of tragedies and natural disasters all over the world recently. As we all struggle in this time of economic duress... I am pretty sure we cannot even begin to imagine how difficult it is for some to get by without the most basic of human necessities. People need help particularly in Haiti right now. Crewcuts has joined forces with the Clinton Bush Haiti Fund. One way you can help is to purchase this $25 T-shirt for your little one. 100% of the proceeds go to help struggling people in Haiti. This darling thing will definitely find its way into my shopping cart and I think you should do the same.

deceptively delicious turkey chili

Ok, so I am on a little cooking kick now that I am back in my own kitchen and have gotten all of my kitchen gadgets out of storage. I have been consciously making an effort to have our family eat healthier lately, and I have been trying to make enough for left-overs for Adam's lunch the next day. He is very picky about his leftovers. Today's leftovers were a hit... Teriyaki salmon on rice with cauliflower. Tonight's meal was from this awesome cookbook that I am reeeeaally loving. I made the Turkey Chili tonight and I think it might be the yummiest and most healthy meal that I have ever made. It was SO delicious. Ruby {my 2 year old} loved it. And I just relished in watching her eat... knowing that she was eating red peppers, carrots, flax seed, tomatoes, extra lean turkey, and all of the other great ingredients. This is definitely a "repeat" as Adam would say. You really must get this cookbook.

Ingredients

    1 tbsp olive oil
    1/2 cup chopped red onion
    1 lb lean ground turkey
    2 cloves garlic
    1 tbsp chili powder, or to taste
    1 tsp salt
    1/4 teaspoon sweet paprika
    1/8 tsp pepper
    1 (15 oz) can chopped tomatoes
    1 (26 oz) carton reduced fat, low sodium chicken broth
    1/2 cup red pepper puree
    1/2 cup carrot puree
    1/4 cup cornmeal
    2 tbsp flaxseed meal
    1 (15 oz) can kidney beans, drained and rinsed
*I would maybe add a cup of corn next time, and I did add more spices than the recipe calls for.

Directions

1. Coat the bottom of a large pot with cooking spray and set it over medium heat. When the pot is hot, add the oil. Add the onion and cook until it begins to soften, about 2 minutes.
2. Meanwhile, sprinkle the turkey with the garlic, chili powder, salt, paprika, and pepper. Add the turkey to the pot and cook, stirring occasionally, until the turkey is no longer pink, 5 - 6 minutes.
3. Stir in the tomatoes. Add the broth, red pepper puree, carrot puree, cornmeal, and flaxseed meal, and stir well. Bring to a boil, reduce heat, and simmer, covered 15 - 20 minutes, or until the flavors have blended. Stir in the beans and cook a little longer, just to heat them through.

Top it off with some shredded cheese and sour cream and wala! Deeeeelicious.

deceptively delicious banana bread {with cauliflower!}

Lately I have been worrying that Ruby is not getting enough of the "right" foods. We recently moved {hence the lack of blogging} and that has made it even more of a challenge to make sure that we all are. I am such an "on-the-go" person and sometimes leave with her in tow at 9:00 in the morning and do not return until after 4:00 pm or so! So... last night, I cracked out this gem of a Christmas gift and decided I would try out one of the recipes. Each recipe has some kind of pureed fruit of vegetable to sneak into it! I had some super ripe bananas, so I opted to sample the banana bread recipe. I love banana bread. I am not gonna lie... the steaming and pureeing fruits and vegetables is going to get some getting used to but I love the idea that Ruby is getting more veggies in her diet.

Ingredients

    nonstick cooking spray
    3/4 c whole wheat flour
    1/2 c all purpous flour
    1/2 tsp baking soda
    1/4 tsp baking powder
    1/2 tsp salt
    1/2 tsp cinnamon
    1/2 c packed brown sugar
    1/4 c canola oil
    1 1/2 c well mashed banana
    1/2 c cauliflower puree
    1 tsp vanilla extract {i always triple this at least!!}

Directions

Steam cauliflower and puree 1/2 c, set aside.
Preheat oven to 350.
Spray a 9x5 loaf pan with nonstick spray.
In a ziplock, mix flours with baking soda, baking powder, salt, and cinnamon. Set aside.
In lg bowl, mix the sugar and oil with a wooden spoon til well combined. Mix in egg whites if using, then banana, cauliflower puree, and vanilla. Add flour mixture and mix til just combined.
Pour batter into pan, bake til a toothpick comes out clean...55-60 minutes. Let cool on a rack for 5 minutes then turn out onto rack to cool before serving.

Thank you for your comment. Wow... I guess I didn't realize how many people really have an opinion on my blog having my personal opinions on them... which it definitely does. Regardless... I thought it was funny. The reason I started this blog, was for ME to have some kind of record/place to save cool/funny/great ideas that I find as I meander the web. I really don't care about attracting more readers. This is my little journal of those fun things that I find. I don't know about some of you but I have a notebook full of random pages that I have torn out of magazines... just the same... of ideas/recipes/cool photos... whatever... and I rarely look through that unorganized mess of a folder. THIS is my way or "tearing" ideas off of the internet and saving them for a rainy day... my way to organize them. And if some of you want to share the ideas with me, fabulous. If you don't, that is fine too. And for that person that wants more explanation about why a post a video of a particular song, or whatever... you just might be S.O.L. Maybe, just maybe I posted something because I liked it, because it is pretty, funny, or because I want to remember it and go back to it someday. So sorry to disappoint.

One of my favorite treats in the beverage department are these delicious, refreshing and colorful IZZE sparkling sodas. Um, I will take on please. This 40 megapixel brand spankin' new DSLR was announced last Thursday and I want one. Hey... it is only around $19K!! The sensor is about twice the size of a typical full-frame 35mm DSLR sensor.......... that is me drooling! Come on Adam.... a possible V Day or Bday present ♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥.... just think about it:)

Everyone keeps asking me what Santa is bringing Ruby for Christmas?? Hmmm. I realized a few days ago that I had NOTHING for her! Literally. I mean I know that she IS getting things from Grandparents and maybe a cousin or two.. but we have nothing for her. Am I a HORRIBLE mother? What?? She doesn't need anything and I really do not need anymore toys around the house. So I was browsing at DownEast Home the other day and I found this darling music box with a ballerina inside that spins to "Somewhere Over the Rainbow." My little "Dorothy" will LOVE it. It was $9.00... much better than $39 here. I bought it. So now.... I do have one gift for Ruby to open on Friday morning:) Trust me... she will still get more than she needs. I hope you all do too. apple beer...mmmmmm

Alright people... I've got a little experiment/favor to ask. I am a BIG fan of the local company/beverage Apple Beer. I/You can purchase this delightful beverage at Costco. Well... people.... the people at Costco have for some odd reason decided to discontinue their sales of Apple Beer:( Super lame. Sooooo, that is why I am going to and I am petitioning all of you (because you know you WILL be at Costco a few times before Christmas) to UTILIZE the Costco Comment Box. Do this for me people.
